What is kombucha tea?
If you've never tried plain kombucha tea, imagine drinking a sweet-tart cider that's naturally carbonated like beer. It's made of slightly sweetened tea that ferments through the use of a natural culture. The culture is the key element. Known as a scoby (for symbiotic colony of bacteria and yeast), it essentially eats the sugar, tannic acids, and caffeine in the tea, and creates a cocktail of live microorganisms that many believe to be beneficial. It's similar to how vinegar is produced, only the end result is tastier.
Though kombucha technically is a tea, it tastes nothing like tea and instead has a distinct sourness similar to a Belgian lambic.
